Central Bistro

Central Bistro and Bar, a fine American culinary eatery, originally opened with the intention of being a true American restaurant. Presently, Central has upheld this goal by finding innovation within the freshest and highest quality ingredients. With a modern atmosphere full of color and texture, Central is an exquisite bistro to visit for lunch and/or dinner.  In addition to eclectic vintage finds, Central strives to provide the past and present in order to create an authentic, community-based restaurant. As an establishment that values their guests, Central has created a culture that provides relaxation, taking delight in the opportunity to indulge guests with an outstanding experience of eating and drinking.

In order to provide guests with the best experience possible, general manager, Seth Murty, has taken the initiative of successfully hiring new Executive Chef, Matt Selby, this past January. As a long-time Denver chef, Selby spent the majority of his culinary career at Vest Dipping Grill with minor stints at Corner House, Beast+Bottle, and Jonesy’s. As an individual who has expressed admiration for the neighborhood-feel of the bistro and an appreciation for the modern atmosphere and concept, there is no doubt that Selby has been nothing but a positive change for the restaurant.
